ABOUT THE BEANS

Grown at 1400m in West Java, Indonesia, and processed using a meticulous extended fermentation method. The cherries are first fermented with Lactobacillus bacteria to build acidity and clarity, then pulped and dried slowly over 7–10 days with Rhizopus a food-safe mould used in fermentation — introduced during drying to develop further flavour. The result is a complex, layered cup with hibiscus, dark berry, and cacao nibs.

ABOUT THE PRODUCER

Husband and wife Wildan and Atieq Mustofa have been running Frinsa Estate since 2010 with a clear focus on quality. In a region better known for wet-hulled processing, they've deliberately gone the other way producing fully washed and carefully processed lots entirely on-site, from harvest all the way through to export. Everything is under their watch, which shows in the consistency and care of what ends up in the bag.

ABOUT THE ROASTER

We work with Elsewhere, a small team based in Deptford, South East London. Great coffee was never optional for us. It had to be right, and Elsewhere just clicked. They have been a big part of our journey over the past 18 months, and we have built a strong relationship with them. They source vibrant coffees and roast them to be balanced, approachable and full of flavour. Using quality beans, roasted by people who genuinely care about the journey from farm to cup, is at the heart of what we do.

This one's a little more involved than most — it combines three distinct stages that each add something to the final cup.

Honey means after the cherries are pulped, some of the fruit mucilage is left on the bean during drying. This adds natural sweetness and body without the full intensity of a natural process.

Extended Fermentation means before that, the cherries spend several days fermenting with Lactobacillus — a naturally occurring beneficial bacteria. This builds brightness, acidity, and clarity in the cup.

Rhizopus is a food-safe mould introduced during drying. It's the same kind used in traditional food fermentation, and here it adds another layer of complexity and depth as the coffee slowly dries over 7–10 days.

What to expect in the cup: Juicy and layered, with floral notes, dark fruit, and a rich chocolatey finish.

In short: A honey process, but with serious depth.
