Anaerobic means the coffee cherries are sealed in a tank with no oxygen, which creates a controlled environment where natural yeasts and bacteria ferment the coffee slowly, building complexity and depth of flavour.
Mosto is the concentrated liquid left over from previous fermentation batches — essentially a flavour-rich juice from earlier harvests. After the initial anaerobic ferment, the coffee is submerged in this mosto liquid for an additional fermentation stage.
The result is layers of fermentation on top of each other — each stage adding more sweetness, fruit character and complexity, while the full washing after keeps everything clean and structured rather than funky or overpowering. It is a very precise, intentional process that requires real expertise to get right.
